Lettuce, Corn and Pineapple salad

Lettuce, Corn and Pineapple salad

This is the quickest and easiest salad you can ever make.. And tasty too!

Ingredients:

Serves 4

  1. Salad leaves: A mixture of Lettuce leaves, Arugula, kale, baby spinach… Any salad leaf you might find- I big bowl
  2. Pineapple rings: Get fresh if available, else canned ones. I prefer canned as they are sweeter- 6 to 8 pcs (if you have cubes available, please use that)
  3. Boiled and cooled corn: 1 cup
  4. Baby tomatoes, slit into half – 1/2 cup
  5. Feta cheese: 1 cup ( can be replaced with any cheese of your choice)

Salad Seasoning:

  1. Sea salt- 1tbs
  2. Pepper- 1tsp
  3. Chilli Flakes- 1tsp

Mix them all together and set aside.

I tend to get a little lazy so i use this ready made mix.

Salad Dressing:

  1. Dry or fresh Basil- 1 tbs
  2. Dry or fresh Rosemary – 1tsp
  3. Dry or fresh oregano – 1tsp
  4. Olive Oil – 2 tbs
  5. Lemon juice – 1 tbs
  6. Mustard – 1/2 tbs

Mix all these ingredients together and keep it aside. What I do is, put them all in a bottle, close the lid tightly and shake it really well. The mixture emulsifies and then I keep it aside. While i prepare the rest, the herbs and oil soak into each other well.

Start putting it all together:

Arrange the salad leaves on a platter. They must be washed and dried with a cloth. Best is if there is no moisture.

Add the corn kernels.

Arrange the Pineapple slices on one side.
Yes there is half a slice..Thats coz i ate the other half.:)

Add the tomatoes and the cheese.
Sprinkle the salad seasoning on the leaves and on top of the pineapple. Be a little generous with the seasoning on the pineapple. The salt chilli and the sweetness of the fruit gives a delicious flavour.

Pour te Salad Dressing on the salad. Avoid putting them on the pineapple.

Your salad is ready!
