Coconut Masala Prawns

Coconut masala prawns is my favourite dish for dinner!

It’s inspired by the various curries I have eaten in South of India. I love the coconut flavour and the spices they use.

I eat it with ‘Steamed Rice’ or ‘laccha Parathas’ and diced onions with lemon and I am sorted. My family and friends love it!

You must try it too…

It is a little spicy (the name says masala, right!), but my Indian taste buds crave for spices… Esp. when i need to feel happy.

Here is the recipe. Enjoy cooking!!

Serves 3 to 4

Ingredients:

Large Prawns – 15

(You can easily replace the prawn with fish or any meat. Just the cooking time would vary. You can also add vegetables if a vegetarian.)

Sambhar powder- 2 tbsp

Haldi Powder- 1 tsp

Pepper Whole – 6 to 8

Cinnamon stick – 1 medium size

Star Anise- 1

Cardamom Black – 2

Chilli Powder- 1 tbs, diluted in 1/4th cup of water

Coconut milk – ½ cup

Onion diced – 1 and 1/4th cup or 1 and half large onion, chopped very finely

Green chilli, slit- 2

Black mustard seeds- 1 tsp

Garlic and Ginger, finely chopped-1 tbs each

Curry leaves- 15 to 20

Oil or Ghee or butter – 2 tbs

Salt to taste

My hint that the prawns are cooked is when they curl and form a circle. Check the picture for reference at the end of the recipe.

Preparation:

  1. Heat oil in a pan (preferably flat bottom as it makes it easier to cook the prawns evenly). Once hot, add the mustard seeds and let it crackle. Turn the heat down.
  2. Add the Chillies, then 1 cup onions, then garlic and ginger and let it cook.
  3. When the onions are nice and soft, add the curry leaves, pepper, cinnamon, star Anise and cardamom. Mix it well and cover and let it cook till its golden brown. You need to keep stirring it every few minutes so the onions don’t burn. Add more oil if required.
  4. Add the sambhar powder, chilli in water and haldi. Mix well. Add half cup of water and cook on slow flame, till the masala is cooked well. You might need to keep adding water. You will know that masala is cooked once the oil separates on the sides.
  5. Add the prawns and salt, mix it well with the masala and cover it.
  6. Let it cook for 3 to 4 minutes. Add the coconut milk, stir, bring to boil and turn off the heat.
  7. Let it sit for 10 minutes.
  8. Sprinkle the 1/4th cup chopped onions on top.

The prawns are ready.

Serve hot with rice or parathas!
