Spaghetti Aglio e Olio with Stir-fry Zucchini and Herbed Baby Corn

Spaghetti Aglio e Olio with Stir-fry Zucchini and Herbed Baby Corn

I personally love making this. It’s quick, it doesn’t need a lot of technique or ingredients and tastes super!

These are three separate dishes, that goes very well together. Its healthy and it’s tasty.

The three dishes are:

  • Spaghetti Aglio e Olio
  • Stir-fry Zucchini 
  • Herbed Baby Corn

Let’s look at making the dishes one by one.

Serves 4

Spaghetti Aglio e Olio

Ingredients for Spaghetti Aglio e Olio :

Spaghetti uncooked – 1 packet

Diced garlic – 2 tbs

Olive oil -2 tbs

Chopped parsley-3tbs (used dried herbs if fresh not available)

Grated Parmesan Cheese – 1 cup

Pepper, freshly ground to taste

Red chilli flakes to taste

Salt to taste

A small peek into my kitchen cabinet!

I always use Kraft Parmesan Cheese. I binds with every dish beautifully and also comes in grated and granules form, which makes it so easy to use.

Preparation:

  1. Boil a large pot of water with salt. I once heard , “Pasta water should be as salty as seawater.’
  2. Add the spaghetti and cook till soft but still firm.
  3. Take out 1 cup of the pasta water and drain the rest. Transfer the spaghetti in a bowl.
  4. Take a pan, pour olive oil and heat. Add garlic, cook for a minute, add pepper, chilli flakes, herbs and spaghetti. Add half the cheese and mix well till combined.
  5. Transfer in in the serving dish and Sprinkle rest or the cheese on top.
Spaghetti Aglio e Olio

Stir-fry Zucchini

Ingredients for Stir-fry Zucchini

Diced Zucchini- 2 Medium size

Dried herbs- 2 tbs

Garlic granules – 2 tsp

Oil- 1 tbs

Salt to taste

Preparation

  1. Add oil in a pan, on low flame.
  2. Add the zucchini, herbs, garlic granules and stir well.
  3. Cook till tender.
  4. Add the salt and mix well and serve.
Stir fry Zucchini is Ready

Herbed Baby Corn

Ingredients for Herbed Baby Corn

Baby corn, cut into half and boiled in soft water till soft- 10 to 15 pcs

Chopped spring onions- ½ cup

Chopped Ginger and garlic- 1 tbs, together

Chopped Basil- 2 tsp

Butter – 1tbs

Freshly ground Pepper and salt to taste

Preparation:

  1. Add butter to a pan. Add the ginger garlic and chopped sprin onions. Cook till tender.
  2. Add the baby corn, pepper, basil and salt. Mix well.
  3. Let it cook for 5 minutes on low heat while stirring frequently.
  4. Ready to serve.
Herbed Baby Corn

All the three dishes are ready!

Serve hot!

I serve it all together in a bowl.. You can serve in a plate or a shallow dish, separately or together, however you like it…
